Christmas cake – chocolate & orange

This year is almost over and I can’t believe it. The past 12 months have been like an hurricane for me. I gave up my job after my studies in public relations. I moved twice: Rome and then Milan again. I said so many NO and so many YES. I felt in love, I broke with someone and someone broke up with me. I chose my family and my family chose to support me. I gave up feeling guilty or sorry for others. I said to friends that we are no longer friends. I made new friends and thank God I love my guys.

Most of all I am stronger, healthier. I have finally learnt how to live with a rare disease without feeling always worried. I chose to leave a work where I was underpaid to be back home for my father and be together to fight our battle. I chose myself. I cut my hair. I am going to gym almost daily. I said to my ex boss that I was leaving because you can’t say to a woman “you should not be so smart”. And now…now I have quit my job as a waitress. I am starting something new, I have joined a new family. I share a new vision. I am writing about Greek food and the love for my country. I am planning new trips.

I have simply grown up. In 12 months. I know what I want to be, what I want to be and who I want to be with. Being at home for just one day gave me the opportunity to stop and think about the new things this year will bring in my life. So yesterday I just switched off my mobile, turned up the radio volume and cooked. Baked a nice and comforting cake.

Ingredients for 12 slices:

1 organic orange

100 gr dark chocolate

3 medium eggs

160 gr Greek plain yogurt

140 gr white sugar

90ml sunflower oil

270 gr self raising flour

30 ml Metaxa spirit (or Cognac of your choice)

Bring a pot of water to boil, add the orange and boil it for 20 minutes. Let it cool for a while then cut them into chunks and put them into food processor and blend until you have a nice and creamy puree. In a large bowl beat the eggs with sugar until white and creamy. Add oil, Metaxa and then yogurt. Add the orange puree.

Sift flour and add it to the egg mixture. Combine well with a wooden spoon. Put the mixture into a greased baking pan and bake into preheat oven at 180°C for 45min. checking with a toothpick if the cake is ready.

Serve with confectioners sugar or a scoop of vanilla ice cream.
